Enjoy it the way Spaniards do, before a meal as an appetizer with a glass of red wine, or paired with the beautifully aromatic qualities of an amontillado, fino, or manzanilla sherry. It works in salads, sandwiches, on eggs, with charcuterie, or even as a dessert with honey, membrillo, or marmalade.
This Manchego is aged for 12 months, giving it a more intense, nuttier flavour and a firmer, more brittle texture than a younger version of the cheese. Made with the milk of the Manchega breed of sheep, native to La Mancha in central Spain; a region known for its rugged wind-swept landscape dotted with the iconic windmills from Don Quixote's time.

Serving Tips & Storage
The cheese can be kept either in the fridge or at room temperature. We recommend always consuming the cheese at room temperature, so it is best to remove it from the fridge several hours before eating. Slice it how you like, thin or thick, and remove the rind.

Manchego is characterized by its balanced creamy, tangy, and sweet flavour combined with a nuttiness and tingle on the tongue typical of sheep's milk cheese. It's not too sharp although it gains sharpness with age, as well as a more granular flaky texture. This cheese is another staple of Spanish cuisine and you'll find that Manchego lingers on your palate but it disappears quickly from your plate.
