After many years spent recovering old vineyards at high altitudes, Bodegas Canopy hit the jackpot in Cebreros. This region of the Sierra de Gredos is often considered the holy grail of old-vine Garnachas growing in a mountain climate in granitic-slate soil.
Nestled in the valley of Alberche, amidst the snowy peaks of Gredos and Guadarrama, the Cebreros vineyard is characterized by its dizzying, almost ravine-like slopes, where old vines over 76 years old spread their roots.
These conditions, together with the utmost respect for the land and the limited production of the old vines, distil the essence of the fruit into the bottle, resulting in a wine with a unique personality, and a true sense of place.
Bright red in colour, reminiscent of ripe cherries. Complex and elegant bouquet of aromas like orange peel, fresh fruit, mountain herbs, hints of minerality expressed as graphite together with notes of cocoa and toasted flavours characteristic of ageing in French oak. In the mouth, it’s easy drinking but intense at the same time, with ripe and delicate tannins that prolong the fruity notes on the palate.

The Cebreros region of the Sierra de Gredos is often considered the holy grail of old-vine Garnachas growing in a mountain climate and granitic-slate soils. The microclimate is hot and dry, and the vines are at high altitude. This makes the wines from this area robust, structured, with acidity and persistence.
It’s an area lost to history in modern times, although there’s a 1272 manuscript from the Bishop of Avila concerning leasing vineyards here. Why did no one create a Gredos/Sierra de Gredos DO, taking in Cebreros, Navalcarnero, San Martín and Mentrida, when these mountain Garnachas initially grabbed attention? We guess this is a classic case of the Spanish, keeping the best things a secret from the world, until now.
Whole grapes undergo pre-fermentation and cold maceration for 15 days, gentle crushing, no pumps are used and the pressing is gentle as can be.
Canopy was founded by Alfonso Chacón and Belarmino Fernández with the vision of creating organic, low-intervention wines that show nuance and character. Their wines have gained international praise for their purity and quality, as the famed Michel Bettane said in Shanghai, they represent the “renaissance of wines in Spain”.
Among the top wineries producing organic wines and recuperating ancestral Garnachas located at a high altitude in the beautiful "Sierra de Gredos” not far from Madrid.
The vision of these oenologists, interested in what the terroir and the grape represent, has placed their wines at the same level as the best low-intervention French wines, perfectly defined by the term “vin de garage”.
Their wines derive their authenticity straight from the land, by selecting the best vines, caring for them sustainably, clearly identifying each plot with only one or two barrels, and blending them in the bottle to create something out of this world.

"The 2015 Kaos is the Garnacha from the village of Cebreros in Ávila. Produced with grapes from the Arrebatacapas zone of Cebreros, it fermented with full clusters and matured in 500 and 600-litre oak barriques for 18 months. They feel this wine, from slate soils, needs at least five years in bottle, because it's very edgy and powerful when young. They haven't bottled any vintages after this 2015, but they might do it again in the future. They feel this is starting to be drinkable now. It has a darker profile, both because of the soils and also the character of the year. Time in bottle has polished its tannins, but they are still abundant and give it a powdery texture and mouthfeel. 1,350 bottles were filled in February 2017."
